Today I’m introducing an incredible recipe for vegan smoky cabbage and peas. Now, I’m not a big fan of cabbage in general, but it can taste pretty good sauteed.
I had extra cabbage on hand from another recipe I made. So I decided to make a vegan but flavorful version of sauteed cabbage. And it turned out really great! Or I wouldn’t be sharing it. 🙂
Sometimes salads have a rep for being boring, simply because they’re supposed to be healthy.
But I think salads should be flavorful, while still being relatively healthy, of course.
In fact, I eat salads because I think they taste good, not just because they’re healthy.
So this recipe is another flavorful salad to add to the mix.
This salad is hearty, with hints of sweetness, and just a little bit spicy.

One of the meals I absolutely love that my mom always made is taco salad. She even had her own taco dressing. I loved her taco salad so much that any time I ever bought taco salad out to eat, I was always disappointed.
The other day I was making my husband a vegetarian wrap for work, and I decided that he should have a salad to go with it. I ended up coming up with this Blueberry Ricotta Salad.
This salad was inspired by the ingredients I had on hand that morning, which happened to be blueberries, almonds, coconut flakes, ricotta cheese, and lettuce. I also made a simple vinaigrette to go with it.
